In 1991, Boutari established and expanded its presence in the Mantinia appellation of the Peloponnese (southern Greece) with the purchase of the historic Cambas winery. Situated at an altitude of 2,000 feet, Boutari's vineyard covers an area of 70 hectares, most of which is planted with the indigenous Moschofilero varietal. Gewurztraminer and Chardonnay are also grown here along with certain other varieties that have been cultivated for several years.
Additionally, Boutari's small private vineyard (1.4 hectares) at Douramani, located on the slopes of the Nemea appellation at an altitude of 900 feet, was planted with Agiorgitiko in 2004. Currently, different research programs with both indigenous varietal clones as well as international varieties (Cabernet Sauvignon and Syrah) have been planted.

Varietal Composition:
50% Cabernet Sauvignon and 50% Agiorgitiko. Agiorgitiko, grown in Nemea A.O.C., offers velvety tannins together with balanced acidity and notes of ripe cherries and blueberries. Wines made from the Agiorgitiko varietal develop well with further aging. Cabernet Sauvignon is grown in the Korinthia region of the Peloponnese and has a full-bodied tannic structure and ripe blackberries. Cabernet Sauvignon yields wines that are dark red in color, richly structured, with a complex bouquet and an intense finish.
Vinification:
The two grape varietals are fermented separately. After destemming, the grapes are softly crushed and transferred into stainless steel tanks. Boutari practices 'cold soak' maceration. Before the actual fermentation begins, the grapes are left at 50ºF for 3 days. The temperature is then allowed to rise, and alcoholic fermentation begins. Malolactic fermentation takes place in new oak barrels, softening the wine. The two wines are then blended and subsequently aged in French oak barriques for 16 months. Once bottled, Odé is aged an additional 6 months in our cellars.
Characteristics:
Purple with red hues; full-bodied with attractive aromas of cassis, blackberries, tobacco, chocolate and strawberries; velvety and smooth with a long finish. The soft Agiorgitiko and the tannic Cabernet Sauvignon create a wine that will further develop its character through additional bottle aging.
Food Pairings:
Pairs perfectly with red meats with sauces and aged cheeses.
