Length/Type of Fermentation:
Controlled cold temperature in steel barrels.

Length/Type of Aging:
The crates of grapes which have been harvested manually are cooled. After the sorting, they are de-stemmed and pressed, then given a cool maceration for 12 hours. From the soft pressing, the must is once again chilled, favoring natural decanting. The fermentation lasts 20 days at a controlled temperature, in stainless-steel tanks, where the maturation is prolonged for four months.
