Founded in 1866 by Carlo Martinez, Martinez is known for its quality Marsala wines which are primarily used as aperitifs, digestifs and for cooking. Martinez's Marsala wines are created from a secret family recipe (which also involves use of the solera process and Slavonian oak to age the wines). Today, run by the fifth generation of the Martinez family, Martinez produces three D.O.C.-designated Marsalas, including Marsala Fine Amber, Marsala Superior Dry Reserve and Marsala Superior Sweet Reserve. Over 130 years of family tradition, combined with careful grape selection, has made Martinez one of the best Marsalas on the market today.

Marsala Fine Amber D.O.C.
Blended from Grillo and Catarratto grapes, this Marsala is made by adding concentrated must for sweetness and "mosto cotto," or "cooked must" (juice that has been reduced by a third and caramelized), which provides color and a special flavor. This Marsala is typically used as an aperitif or digestif, as well as in baking cakes.

Marsala Superior Dry Reserve D.O.C.
Marsala Superior Dry Reserve is a bright-amber colored Marsala made with Grillo and Catarratto grapes and aged for five years. In addition, Marsala Superior Dry Reserve is made with "mosto cotto," and sweetened with "sifone" (a grape whose fermentation has been halted by the addition of spirits). This Marsala is typically used to cook savory dishes.

Marsala Superior Sweet Reserve D.O.C.
Produced from Grillo, Inzolia and Damaschino grapes, this Marsala is amber in color with golden tones, and is aged in oak casks for more than five years. This Marsala is typically used to prepare desserts such as tiramisu or zabaglione (sabayon).
